Peppermint cake ­ Christmas tradition

I understand there are many different opinions on "the" vaccine. I have to say I am of three or four different minds about it also.

My brother Dennis, who lives in Memphis, Tenn., and works at Methodist University Hospital in physical therapy, was one of the front-line health workers who received the vaccine last week.

So far, he's had no side effects whatsoever, although, I understand, that some people have had minor reactions.

Everyone keeps asking "Are you going to get the shot?" On TV, everyone says sure they are and then of course there are those who are saying there's no way.

Me personally? I'm so unsure.

Daughter Dana is an RN at the dialysis clinic here in Holly Springs. I've heard that the virus is really going around in town and I'm sure she and the other nurses/techs at the clinic are often exposed. Dana won't come in my house and won't let me come anywhere near her. I'm very grateful that she's so concientious about this, but on the other hand, I miss her company ­ and her quilting stories, stuff, etc.

For Christmas this year, we're doing the same thing we did for Thanksgiving. Just me and Kris, the girls and their hubbies and families, and we're forcing Dana to come to granddaughter Remy and Mitch's house. We'll wear masks except when we're eating and we will social distance.

We're having Chinese again this year. Last year we were at granddaughter Merideth and Tim's house and we had Chinese. It was so fun! The great-grandbabies love Chinese. Well, we all do, so it's a good plan.

It's way too soon after Thanksgiving to have turkey and dressing again. I ate dressing leftovers so long that it may be next Thanksgiving before I can eat that again.

I am making a Christmas tradition to take to Remy and Mitch's ­ peppermint cake.

My mother made it every Christmas and I've continued the tradition. Remy and Mere beg for it anyway.

If you've never had it, it's very simple. Take a yellow cake mix and add about two good handfuls of crushed candy cane. Tradition declares it must be made in two round layers and frosted, make buttercream icing and add about two good handfuls of crushed candy cane.

It's really, really good. I hope for your Christmas you can enjoy something as much as we enjoy peppermint cake. And if you're offered the opportunity to take the vaccine shot, take it. I'm pretty sure I'm going to... Merry Christmas!
