| Recipes from Martha Ruth Leonard | An American Feast Great recipes from public tv’s greatest chefs | | Old Fashioned Spicy Lemonade | - 3 tbsps. lemon zest
- 4 cups water
- juice of 6 lemons, strained
- additional lemon slices, studded with whole cloves, or fresh mint
| - 4 cups sugar
- 2 cinnamon sticks
| In
a deep saucepan, combine the lemon zest, sugar, water and cinnamon
sticks. Bring the mixture to a rolling boil. Boil gently, uncovered,
over medium heat for five minues. Remove from heat and cool. Strain the
mixture through a fine wire sieve or cheesecloth. Add the strained
lemon juice to the sugar syrup. Transfer to a glass container and
refrigerate until needed. To make
the lemonade, mix 4 tbsps. of the lemon syrup with 1 cup of cold water.
Fill 2 water glasses with ice and pour in the lemonade; this is enough
for 2 average-size water glasses. Garnish and serve. | | Onion Fritters | - peanut oil, for deep frying
- 1 tbsp. yellow cornmeal
- 2 tsp. baking powder
- 1/4 tsp. black pepper
- 1/2 cup cold milk
- 2-1/2 cups finely chopped onion
| - 3/4 cup all-purpose flour
- 1 tbsp. sugar
- 1/2 tsp. salt
- dash of grated nutmeg
- dash of hot red pepper sauce
| Heat
the peanut oil to 375° in a deep-fryer, or deep, straight-sided
pan. Meanwhile, in a large mixing bowl, whisk together the flour,
cornmeal, sugar, baking powder, salt, pepper and nutmeg. Stir in the
milk to make a thick batter, smoothing out the lumps. Add the pepper
sauce and onions; mix well. Drop several heaping teaspoonfuls of batter
into the hot oil and begin turning the first fritter over as soon as
you finish dropping in the last spoonful of batter. Fry until golden
brown on both sides. Remove with a slotted spoon to a paper towel, to
drain. Serve immediately. And you won’t regret it if you double the
recipe! | | Green Tomato Fritters | - 2 large green tomatoes
- 1 cup al- purpose flour
- 1/2 tsp. salt
- 1 tsp. sugar
- pinch of ground mace
| - milk to cover
- 2 tsps. baking powder
- 2 eggs, separated
- 2/3 cup milk
- vegetable oil, for frying
| Core
the tomatoes and cut into 1/4 inch slices. Place in a shallow bowl and
add milk to cover. Let stand while making the fritter batter. Sift
together the flour, baking powder and salt into a bowl. Stir in the egg
yolks, sugar, 2/3 cup milk and mace. Beat the egg whites until stiff
peaks form, then gently fold into batter. Pour oil into a skillet to a
depth of about 1 inch and heat until very hot, about 375°. Remove
the tomato slices from the milk, dip in batter and fry, a few at a
time, until golden brown on both sides, about 5 minutes. Remove with a
slotted utensil to paper towels to drain. Serve hot. |

a second book just published, Chesley Thorne Smith is becoming Holly
Springs’ best chronicler of Marshall County history. “Marshall County,
from the Collection of Chesley Thorne Smith” follows her first book,
“Childhood in Holly Springs, A Memoir.” Her decision to publish the
book came because of the many requests she has received for her
photographs. “Arcadia Press only wanted 200 photos for the book. Lord
knows I have many more -- I would say at least 1,000,” she laughed. Chewalla Lakes prepares for closing in October Chewalla
Lake is closed to swimmers, but fishing will continue until October.
Last week, the U.S. Forest Service drew the lake down five to six feet
to allow the current shoreline to dry. The area will be deepened and
gravel laid for spawning grounds. Docks will be repaired and added,
along with a boat ramp and an expansion of the beach. 25 Years Ago - August 4, 1983 Ash, Bell win primary Incumbent
Sheriff Osborne Bell led a field of six men to take the Democratic
nomination in Marshall County Tuesday with a sweeping victory. Bell
received more than 50 percent of the votes cast. Bell took the
nomination without a run-off. Other incumbents who will not need a
runoff include Circuit Clerk Lucy Carpenter, Chancery Clerk J.M.
(Flick) Ash and Tax Assessor Bobby Fant. Caravan of supporters A
caravan of supporters of Lanier Hurdle’s candidacy for secretary of
state traveled to the Neshoba County Fair Thursday. Approximately 22
cars made the trip to Philadelphia. Picnic for Mrs. Shaw Mrs.
Stella Shaw was surprised with a picnic supper at the home of her
daughter Barbara Whaley, on July 24. Many family members were on hand
to celebrate her 71st birthday. 50 Years Ago - July 24, 1958 Coke party Mrs.
R.E. Green entertained on Friday afternoon with an informal Coke party
complimenting Mrs. H.E. McKeown, who is leaving with her family on Aug.
1 to make her home in Jackson. Artistic arrangements of pink roses and
yellow glads decorated the reception rooms. Invited guests were the
honoree’s mother, Mrs. Mims Finger of Ripley, Mrs. Olin Smith, Mrs.
Fred Henley, Mrs. Fred Belk, Mrs. B.D. Hammond, Mrs. Ivy Reynolds, Mrs.
W.C. Sandusky, Mrs. L.A. Smith, Mrs. Norman McKenzie, Mrs. Phil Armor
and Mrs. Tom Wynne. Barbecue Mr. and Mrs. Curtis A. Greer
entertained with a barbecue supper on Saturday evening at their
attractive home in Woodland Heights. Honorees were Mr. and Mrs. Frank
Hopkins Jr. of Arizona. Artistic arrangements of gladiola and asters
decorated the home. Guests were Mrs. Mary Ann Sowell, Charles N. Dean,
Mr. and Mrs. Jack Wittjen and Alex Ventrexx of Woodville. Picnic supper Mr.
and Mrs. Ferrell Moore entertained with a picnic supper Sunday at their
home on Chesterman. Those attending were Sandra, Karen, Grace Moore;
Mr. and Mrs. B.S. Holbrook; Mr. and Mrs. Henry Holbrook, Larry and
Linda Holbrook; Mr. and Mrs. E.J. Marett, Potts Camp; Misses Ester and
