Chicken pot pie revisited
• Both my brothers were coming to my house last Sunday, so I decided to make chicken pot pie again and this time, I wanted leftovers, so I was going to double the pans.
I cooked a smallish turkey, instead of chicken — I planned a big chicken pot pie!
I had enough turkey to make two extra large casserole dishes full of pot pie! I even made a small dish extra to put up for Trey, because once again, chicken pot pie for dinner and he wasn’t at the house.
Remy’s friend Morgan was spending the afternoon, along with Morgan’s young cousin, T.J. T.J. opted for a couple ham sandwiches — he was pretty sure chicken pot pie wasn’t any good.
Morgan wanted to taste it before she committed to ham sandwich or pot pie. I think she liked it, as she ate either four or five helpings.
She wanted to take some home also, and I’d have let her except for one small problem.
The two really large casserole dishes had been scraped clean. I’d put Pop a small bowl in the refrigerator for a snack later and Dennis and Danny each had a small bowl of leftovers to take home and it was gone. The pans were scraped clean. Morgan would have finished licking them clean if I’d have let her and she’d have thought of it!
I’m trying to imagine how much chicken pot pie I’m going to have to make to have leftovers.
• My older brother is a regular visitor to my house. He comes every other Sunday and spends the afternoon with us and I cook a big meal — partly because, as a bachelor, he doesn’t get home cooked meals often and partly because I like to cook and when I cook I make big meals. I can’t help it.
My former son-in-law Jason always used to laugh and say I thought I was cooking for an invading horde. I think he was right.
My younger brother Danny, and his dog Maggie, are not so regular Sunday afternooners, although when he has several days off in a row, he will come spend a couple days (with Maggie, of course).
It’s always nice to have both brothers come down at the same time and I love Maggie Dog. She loves to come to our house also. We have cats and she’s pretty sure cat would taste as good as chicken pot pie.
She’s always on a tie-out cord at our house when she’s outside (mostly, she’s inside). Her favorite place is sprawled right of front of the big glass doors in front of the deck, where the cats all hang out.
You can just see her thinking — delicious cat pot pie! And no leftovers!
