Recipes from Martha Ruth Leonard Luby’s Cafeteria Recipe Collection 50th anniversary Sweet Fruit Slaw 1 medium head green cabbage, shredded (about 2 lbs.) 1-1/4 cup raisins 1 cup diced red apple 1-1/2 cups mayonnaise 1 tbsp. sugar 1-1/4 cups canned, drained pineapple tidbits In
large bowl, combine cabbage, raisins, pineapple and apple. In small
bowl, mix mayonnaise and sugar until well blended. Pour over cabbage
mixture and toss lightly to coat evenly. Cover and refrigerate at least
two hours. 8 servings.
Mexican Chef Salad 1 lb. lean ground beef 1/4 cup chopped onion 1 tbsp. chili powder 1 tbsp. ground cumin 1 tsp. salt 1 tsp. pepper 1 tsp. garlic powder 4 cups gently packed romaine lettuce, in bite-size pieces 1 cup rinsed and drained kidney beans 1 cup (4-oz.) shredded American cheese 1/2 cup slivered onion 1/4 cup sliced ripe olives 8-oz. bottle Thousand Island dressing 1-2 cups tortilla chips 1/2 cup cherry tomato halves In
10-inch skillet, brown ground beef with onion, chili powder, cumin,
salt, pepper and garlic powder. Drain. Cover and refrigerate at least 2
hours. In large bowl, combine romaine, beans, cheese, onion and olives.
Add 3/4 of the ground beef mixture and toss lightly to mix evenly.
Drizzle with salad dressing. Garnish with chips, tomatoes and remaining
ground beef mixture. 6 servings.
