Recipes from Martha Ruth Leonard The Saints’ Kitchen All Saints’ Episcopal School, Vicksburg Mexican Caviar 2 (4.5 oz.) cans ripe olives 2 (4 oz.) cans green chilies chopped 2 tomatoes, peeled and chopped 2 cloves garlic, mashed 3 tsps. olive oil 2 tsps. red wine vinegar 1 tsp. pepper 1 tbsp. cilantro 3 green onions, chopped Combine all ingredients and chill overnight. Serve with tortilla chips. Serves 8-10.
St. Mary’s Slaw 1 head cabbage, shredded 1 bell pepper, chopped 1 onion, chopped 1/3 cup oil 1 tsp. dry mustard 1 jar diced pimiento 1 cup sugar 1 cup vinegar 1 tsp. celery seed 1 tsp. salt Combine
all ingredients except cabbage, mix together well. Pour over cabbage
(in large bowl), stir well to mix all and refrigerate.

Caramel Apple Cheesecake 21-oz. can apple pie filling 9-10 inch graham cracker pie crust 2 (8 oz.) pkgs. cream cheese, softened 1/2 cup sugar 1/4 tsp. vanilla 2 eggs 1/4 cup caramel topping 12 half pecans, plus 2 tbsps. chopped (you may substitute walnuts) Preheat
oven to 350 degrees. Reserve 3/4 cup apple filling. Spoon remainder
onto crust. Beat together cream cheese, sugar and vanilla until smooth.
Add eggs and beat well. Pour over apple filling. Bake 35 minutes or
until center is set. Mix reserved filling and caramel topping in a
saucepan, heat about 1 minute. Spoon sauce onto cheesecake and spread
evening. Decorate with pecan halves and chopped pecans. Refrigerate.

Lester, of Byhalia, was honored Fri., Oct. 13, for 35 years of service
with the Byhalia Post Office. He has served as a carrier since 1965.
“When I started, we had three routes, now we have 10. I’ve been through
about 30 vehicles, and stamps were five or six cents,” he said. Survivor party Michael
McNeece, Potts Camp High School principal, ate snails for students at a
“Survivor Party” held after selling candy to raise money for the
school. The snails were cooked by the cafeteria staff. The students
enjoyed pizza and soft drinks. The money raised will go toward books
for the library. 25 Years Ago - October 17, 1985 Homecoming queen at Holly High Gladystine
Glover, daughter of Mr. and Mrs. Leroy Glover, was crowned homecoming
queen of Holly Springs High School last Tuesday night. First runner-up
was Vicki Moore; second runner-up was Marcia Martin. “The Lord has kept me here for a purpose” One
hundred years have come and gone since Eutokie Crawford was born in the
Slayden community on Oct. 15, 1885. A celebration was being planned for
the occasion at Slayden Baptist Church, where she has been a member
since birth (formerly the old Alexander Baptist Church). Miss Tokie
fell and injured her hip, so the celebration is being postponed. She
still lives in Slayden, less than a mile from her birthplace. 50 Years Ago - October 20, 1960 Local Boy Scouts Court of Honor Local
Boy Scout Troop No. 47 held a Court of Honor Fri., Oct. 7, in the Holly
High auditorium. Frank Greer and Mike Powell were recognized for
meeting the requirements for Eagle Scout, the highest award a Scout can
achieve. Among those receiving Merit Badges were Mike Moore, David
Childers, Jimmy LaFever, Wilson Golden, George Rather, Carl Bush, David
McWhirter, Tolly McClatchy, Richard Bush and Henry Lacey. David Strickland playing pro football David
Strickland, formerly a football player at Holly Springs High School and
with the Memphis Tigers, is now a guard with the Denver Broncos. He is
the son of Mr. and Mrs. Henry Strickland of Holly Springs.
