Marshall County Humane Society News Humane Society open house April 20 The
Marshall County Humane Society is hosting an open house and invites
everyone to come see our new facilities for the spay/neuter clinic, in
Byhalia. On April 20, the Humane Society is
offering tours of the facility at School St. and College St. in
Byhalia, plus an opportunity to meet our spay/neuter vet. Please
come by between 5:30 and 8 p.m., have some refreshments and see what
the Humane Society is doing for local pets and their owners.
Recipes from Martha Ruth Leonard Culinary Arts Institute ~ The Casserole Savannah Beef and Noodles 1 lb. ground beef 28-oz. can tomatoes, do not drain 1 tsp. Worcestershire sauce 5-3/4-oz. can pitted, ripe olives, sliced 1 cup chopped onion 2 tsps. salt 2 tsps. chili powder 3 cups cooked noodles 8-oz. shredded Cheddar cheese Brown
ground beef and onion in a skillet, drain off excess fat. Add tomatoes,
salt, chili powder and Worcestershire; simmer 30 minutes. Alternate
layers of half the noodles, half the meat mixture and half the ripe
olives in a 2-1/2 qt. casserole; repeat layers. Top with shredded
cheese. Bake, covered, at 350° for 30 minutes, or until heated through.
6-8 servings
Company Ham-and-Egg Bake 12 hard-cooked eggs 3 cups diced, cooked potatoes 1/2 cup milk 1 tbsp. Worcestershire sauce 1/4 cup snipped parsley 3 cups chopped cooked ham 3 cans (10-3/4 oz. each) condensed cream of mushroom soup 1 tbsp. lemon juice Shell
eggs and halve lengthwise. Place eggs, yolk side up, in a 13x9 baking
dish. Spoon ham and potatoes over eggs. Heat together soup, milk,
Worcestershire sauce and lemon juice. Pour over eggs. Sprinkle with
parsley. Bake, uncovered, at 350° for 30 minutes, or until heated
through. 12 servings
Veal Parmigiana 1 lb. veal steak or cutlet, thinly sliced 1 egg 1/3 cup grated Parmesan cheese 1/4 cup shortening 6-oz. can tomato paste 1 tsp. salt 6 slices mozzarella cheese 1 tsp. salt dash pepper 2 cups, plus 2 tsps. water 1/3 cup fine, dry bread crumbs 1 med. onion, finely chopped 1/2 tsp. basil Cut
veal into 8 pieces; sprinkle with 1 tsp. salt and the pepper. Lightly
beat together egg and 2 tsps. water. Combine Parmesan cheese and bread
crumbs. Dip veal in egg wash, then Parmesan mixture. Refrigerate at
least 1/2 hour. Brown veal on both sides in shortening in a skillet.
Remove to a 1-1/2 qt. shallow baking dish. Sauté onion in skillet, stir
in tomato paste, 1 tsp. salt and basil. Simmer 5 minutes. Pour 3/4 of
the sauce over the veal. Top with mozzarella cheese. Pour remaining
sauce over cheese. Bake, uncovered, at 350° 20-25 minutes, or until
mixture is bubbly. 4 servings

Yellow Fever Martyr Church and Museum opens officially this week in
time for the Holly Springs Pilgrimage. The restoration of the former
St. Joseph Catholic Church and original Episcopal Church has been
underway for several years, as money became available. “We think we’ve
accomplished quite a bit, through blood, sweat, tears and prayers,”
said Al Hamer, one of the faithful who has worked to see the project
through. Letter of intent Demetria Burks, a senior and
student athlete at Potts Camp High School, recently signed a letter of
intent to attend the University of Mississippi, with a scholarship to
run track and field at Ole Miss. She entered her senior year, never
having been beaten in the 800 meter run. She will be competing April 18
and hopes to lead the Potts Camp track team to their seventh state
track title this spring. 25 Years Ago - April 11, 1985 DeBardeleben receives the sacrament of baptism Frederick
Alexander DeBardeleben V, infant son of Mr. and Mrs. Rick DeBardeleben
received the sacrament of infant baptism Sunday, March 25, at First
United Methodist Church in Holly Springs. Alex is the grandson of Mr.
and Mrs. Leamon Malone of Byhalia; Fred DeBardeleben of Holly Springs
and Nita DeBardeleben of Mammoth Spring, Ark. Callicutt receives award Wayburn
Callicutt, a member of the Marshall County ASC Committee, received a
certificate of service award during a meeting of the ASCS County
Committeemen, held in Oxford. 50 Years Ago - April 14, 1960 Local telephone operator receives five year pin Marie
Slayden, telephone operator in the Holly Springs office, was honored
with a tea in the lounge of the telephone office Friday, April 8, in
recognition of five years service with the telephone company. Ava P.
Divine, chief operator, presented her with a five-year pin and a
carnation corsage. Formal opening of library branch The
Marshall County Library board of trustees invites all citizens in the
county to be present at the formal opening of the Potts Camp branch
Friday afternoon. The library is located in the Jordan building. Mrs.
Curtis Greer is to be the librarian.
