Recipes from Martha Ruth Leonard Traces of Mississippi A Cookbook of Our Heritage Swiss Potato Cheese Soup - 2 cans condensed chicken broth
- 1 can condensed beef broth
- 3 cups water
- 2 lg. onions, diced
- 4 lg. potatoes, peeled & diced
- 2 cups sliced celery
- 1/3 c. dried parsley
- 1 lg. jar sliced mushrooms
- 1/3 cup margarine
- 1/3 cup all-purpose flour
- salt & pepper to taste
- 5-oz. mozzerella cheese, shredded
In
large kettle or saucepan, combine broths, water, onions, potatoes,
celery, parsley and mushrooms. Cover and simmer 30 minutes or until
potatoes are tender. In a small skillet, melt margarine and stir in
flour. Stir constantly over medium heat until mixture becomes golden
brown. Add to simmering soup; stir until it bubbles and thickens.
Season to taste with salt and pepper. Spoon into bowls and sprinkle
with cheese. This is easy to make!
Creole Limas
- 6 slices bacon, fried,
- crumbled, reserve drippings
- 1/2 cup minced onion
- 1/2 minced bell pepper
- 2 tbsps. flour
- 16-oz. can tomatoes, undrained
- Tony Cachere’s
- Creole Seasoning
- 1 cup shredded
- cheddar cheese
- 16-oz. can lima beans
Saute
onion and pepper in 2 tablespoons bacon drippings until tender. Blend
in flour, add tomatoes and seasonings. Cook, stirring, until slightly
thickened. Add cheese and stir until melted. Fold in beans and heat
thoroughly. Top with crumbled bacon.
Dirty Rice
- 1/2 stick margarine, softened
- 2 can beef broth
- 1 cup uncooked rice
- 1 small can sliced mushrooms
Preheat
oven to 375 degrees. Combine ingredients; blend thoroughly. Spoon into
a 1 quart baking dish. Bake, uncovered, for 1 hour.
